Changes in the Distribution and Activity of N-Acetyl-¥â-D-hexosaminidase and Chitinase During Cultivation of Soybean Sprouts

During cultivation of soybean sprouts changes in distribution and activity of N-acety1- ¥â -D-hexosaminidase and chitinnse, which are known as pathogenesis-related proteins, were studied. Content of water-extractable Protein was increased with the increase in fresh weight and length of soybean sprouts during cultivation. N-acety1- ¥â -D-hexosaminidase and chitinase. distributed mainly in cotyledon, were increased with cultivation. Two endochitinase isoforms (34 and 54 kD) were detected in active staining.34 kD chitinase was drastically increased 4 days after germination, and 54 kD chitinase was detected only S and 6 days after germination.
